Bloody Maria's

Here is a terrific alternative to the stale, old Bloody Mary.  I got this recipe from a fine cooking magazine, Cuisine at Home. If you've not picked it up, do so.  The only issue I have with it is that the recipes can be heavy on the calories. But modify!  This recipe is for a Bloody Maria.  A totally different taste brought on by using tequila instead of vodka.  I've served this at brunches along with regular Bloody Mary's and the Maria's go first.  Makes 4 cups
Bloody Maria's
Combine; Rub:
2 Tbls kosher salt
1/2 tsp ground cumin
lime wedge

Stir together and garnish:
3 cups tomato juice
3/4 cup tequila
1/4 cup fresh lime juice
2 tbls chipotle chili in adobo sauce, minced
2 tbls Worcestershire sauce
2 tbls chopped fresh cilantro
2 tbls grated onion
1 tbls Tabasco
celery salt and black pepper to taste
whole scallions

Combine salt and cumin on a plate.  Rub the rims of 6 glasses with the lime wedge and then dip into the cumin mix.  Set glasses aside.  Stir the remaining ingredients (except scallions) together in a pitcher to blend.  Fill the prepared glasses with ice, top with Bloody maria mix, and serve, garnished with scallion.
